Why ESB ages this way

ESB sits in a freshness sweet spot. The English hop character (East Kent Goldings, Fuggles) fades faster than American hops would, but the malt-forward profile (Maris Otter, crystal malts) holds the beer together as the hop notes diminish. ESB cask-conditioned at a UK pub is at peak within 2-3 weeks of packaging; bottled or canned versions extend the window to several months.

How to store ESB

Cool storage at cellar temperature (50-55°F) is traditional for ESB. Refrigeration is fine but the beer is best served around 50°F to let the malt character show. Cask-conditioned versions are best within 2-4 weeks of packaging — they're alive and continuing to condition.

When to drink it

Within 4-6 months for bottles/cans. Cask: 2-4 weeks from packaging, the moment the cask is tapped. Fuller's London Pride and Timothy Taylor's Landlord are the canonical examples worth seeking out.

Worth knowingFuller's ESB, brewed since 1971, gave the style its modern definition — "Extra Special Bitter" was originally a Fuller's trademark before becoming a recognized BJCP style category. The beer was created to mark the brewery's 125th anniversary and ended up defining a category.
